These beautiful fish, are ugly! However, they are the pride and joy of many fishers that want to catch ‘the big one’. They can grow up to 200kg! The flesh is lean and slightly firm and large flakes. Halibut has a sweet but gentle flavor. As with all flakey wild fish, do not overcook. A little raw is better then a little dry. It pairs well with bold flavours, or simply add some lemon juice and basil. Bake, Braise, Broil, Grill, Poach, Sauté or Steam. The options are endless.
